Since I can't vote for three, since shininess is just a fun color swap, I prefer Umbreon, Sylveon, and the normal Eevee the most (Umbreon probably winning out). I also like Espeon for some reason, even though I usually don't like green shinies. Just my two cents. Let us know what you decide!
(I also have a shiny Jolteon as part of my "get a shiny to correspond with every dog I've owned" plan. He's for my current golden, even if he's actually greenish when shiny.)

Glaceon looks cool, and so does Sylveon, but I choose Glaceon over Sylveon in a heartbeat lol.
