I am at a chain of 116 right now, still, I have not found a single shiny pokemon! This is insane.

I just broke my chain, well, the chain wasn't working anyways.

The highest chain I've gotten to was 110 with no shiny before, but if you keep going, try again, you'll get a shiny. I usually get them between 40 and 60 encounters in a row, but the RNG system can be finicky...
