Does anyone know if it's possible to encounter a Zapdos, Articuno, or Moltres in X and Y with their Hidden Ability?
I don't want to keep resetting for no reason.

It unfortunately isn't. The only way to get them was from a few events back in gen 6 or you can transfer them from red, blue or yellow through pokebank.
