Will admit GF really messed up here since the encounter is just so sudden and you have to catch/beat it so players can't catch it the first time. IF you are going SR for Tapu Koko, just faint it, bteat the Pokemon League again, then come back to the ruins and Koko should be there. The second time forward you should be able to save before the battle so stock up on supplies and good catching mons during resetting.
