You can try unique like for example letting everyone do a game in plaza or in gold/silver and with good score get a prize or something like that? (casino)
Or who gets a specific caught pokemon make a picture of the pokemon caught for proof and send to you in pm? (like example the bug conquest)
Or creating a story in your own words for in forums where people can comment on your greatest adventures.
