Welcome to Gen 7! All of the legendaries in the main game are shiny locked but when you get to the stage you can encounter the 'wormholes' (trying not to spoil much here) There are cool Pokémon you can actually shiny hunt if you want so it is up to you on that one.
Most of the things I can think of you can shiny hunt are end game / late game so I am not sure how much to say without spoilers but you should be fine for the most part up until you get past the fourth island
I don't know what kind of trainer you are (i.e if you enjoy competitive battling, breeding Pokémon, shiny hunting etc) but if there is anything you need feel free to ask on the forums and I am sure either myself or another member here will be happy to help. I specialise in Pokémon breeding so feel free to ask me anything in that regard asn I will be happy to help you further
