Hmmm... Let's see...
Okami should be first and foremost on my list. This whole soundtrack is brilliant, but just as example, here's "The Sun Rises".
In terms of whole OSTs, then I'd be remiss to not mention Journey, Shadow of the Colossus, Spyro the Dragon, Crash Bandicoot 2, and Donkey Kong Country 2.
Individual track-wise, I'd include:

- "Noloben Lab", from the Myst V OST, though the entirety of that franchise has incredible soundtracking,
- "Ribbon Road" from Mario Kart Super Circuit
- "Aloha Robo" from Jumping Flash!
- and of course, at the risk of opening a whole new can of worms, perhaps the most epic boss theme in game history, "The Greatest Jubilee" from Bayonetta.
