My personal favourite is Luxray (no suprise there right). But that was already nominated and im not too sure how the ruling on that works, so if I can choose Luxray then I nominate it, but if not my second fav is Umbreon.  I also like shiny Boldore, Staryu, Palpitoad, Fire Oricorio, and Rockruff. But Luxray is #1.
