If I am reading these rules correctly, each week my team of pokemon can be different as long as there are no overlapping pokemon on my other 2 teammates teams. Am I reading that correctly or not?

Yes, Vexian that is correct. You can change the Pokemon in your team each week if you would like, as long as you and your teammates don't use the same Pokemon in that week matchup.
